Sarj Mclinton

If you find that shopping for ingredients is boring, or that you just don’t know what you are going to cook this week to keep your family happy then try her own recipes, she feels they will make things easier for you. They are for the most part quick, easy and reasonably priced. Sarj has created her own sauces that can make anyone a great cook too.

INGREDIENTS
500g minced beef
1 large onion chopped finely
1 celery stick chopped finely
4 cloves garlic chopped/grated
5 stalks of parsley finely chopped but reserve the leaves
A large handful of celery leaves (top leafy part of the celery)
1 small carrot cut into 4
700g bottle tomato puree/pasta sauce
400g can of chopped tomatoes
1½ cups water
1½ teaspoons salt or to taste
½ teaspoon crushed/ground black pepper
1 tablespoon tomato ketchup/sauce
¼ cup olive oil
4 bay leaves (dried or fresh)
Fresh or dried chilies (optional)
Grated Parmesan cheese (optional)
Method:

  1. In a large pot add the oil then on medium to high heat brown the onions with garlic, celery and parsley stalks.
  2. Making sure that the onion mixture doesn’t burn by reducing the heat when and as needed. When it becomes golden in colour this will take roughly ten minutes and looks soft in appearance then add the mince beef and brown it on a high temperature till moisture is absorbed.
  3. Now add the puree, sauce and tomatoes and rinse out the bottle and can with the 1½ cups of water. Add the carrot, bay leaves half the parsley leaves, salt and pepper and bring the mixture to boil then reduce heat and cook for at least one hour. Check for seasoning and add some parmesan cheese if desired or leave it as topping and stir and serve the sauce over pasta or spaghetti and topped with parmesan as desired and garnish with remaining parsley leaves as preferred.
